botrytisSauternes is one of the few wine regions in the world where Botrytis cinerea - called "noble rots" - happen. It’s thanks to its microclimate with the confluence of cold waters from Ciron river and those, warmer, of Garonne river. Noble rot is a fungus that causes grapes to lose nearly all of their water content. With the absence of water, the sugar becomes more concentrated; it’s why Botrytis grapes produce sweet wines. The Sauternes wine region comprises five communes: Barsac, Sauternes, Bommes, Fargues and Preignac.
