Sommelier Nicolas Rebut picks five lesser-known labels that will charm even the most seasoned oenophile

It is easy to impress with a bottle of Château Margaux or Château Lafite Rothschild, but to uncork an unforgettable bottle of wine few have discovered is a truly spiritual experience. Here are five to pair with dishes at your next dinner party. Boutique wines to impress your friends with Allobroges Cuvée Schiste, Domaine des Ardoisières, 2012 An astonishing wine with an incredible aromatic complexity and minerality from the terroir of Savoie. Tasting notes: A very surprising and original nose with aromas of yellow fruits (apricot, pineapple), mineral and white pepper. Well-balanced palate between richness and acidity. A very long finish. Very mineral and fresh. Pair it with: Cold lobster salad with shaved truffles, roasted prawns, cheese. Boutique wines to impress your friends with Champagne Lassaigne, Brut Réserve, Blanc de Blancs  This superb Blanc de Blancs is raised under the care of Emmanuel Lassaigne, a young and exceptionally talented winemaker. Tasting notes: Complex and intense aroma. Aromas of yellow fruits, white flowers, and fresh brioche surrounded by beautiful mineral notes. A Champagne of character, very delicate and fine. Pair it with: Lobster, white fish carpaccio. Boutique wines to impress your friends with Château Simone Rosé, Palette, 2013 Château Simone is one of the jewels of Provence. It is a remarkable wine I have served many times in some of the world's finest restaurants. Tasting notes: An original nose with notes of wild strawberry, raspberry and cherry. Slightly minty and  fresh. Very elegant with a very long finish. Pair it with: Grilled scallops, shrimp pad thai, salmon maki, sea bass with fennel. Boutique wines to impress your friends with Patrimonio, Domaine d'E Croce Yves Leccia, 2011 Hailing from the Patrimonio wine region located on the northern coast of Corsica, this beautiful wine is made with local Nielluciu and Grenache grapes. Tasting notes: A very nice nose, intense and complex with aromas of raspberry, blackcurrant and blackberry. Delicious palate, generous and well-balanced, with smooth tannins. An impressive length. Pair it with: Beef stew, lamb tagine, rack of lamb, beef with oyster sauce. Boutique wines to impress your friends with Beaune 1er Cru Les Grèves, Domaine de la Vougeraie, 2001  A great Pinot Noir from Burgundy from an outstanding winemaker. Exceptional and rare, only 1294 bottles of this wine were produced in 2001. Tasting notes: Very charming nose, with a nice aromatic presence of red fruits, leather, fresh tobacco, candied cherries and plum. Stunning palate with velvety tannins. Harmonious, smooth with the intensity and depth of a Pinot Noir from a great terroir. Pair it with: Peking duck, slow-cooked lamb, spiced pork belly confit.
