Word of the day "Malolactic fermentation"
Jan 01, 2018
maloMalolactic fermentation is the transformation, through the action of lactic bacteria, of malic acid into lactic and carbon dioxide. It is considered essential for stability in red wines and is sometimes used for whites. Its effect is partly to make the wine less acid, and for whites to develop a generally softer or creamier character.
